We are seeking an accomplished
Director of Food & Beverage
to lead and elevate the culinary and service experience at Baccarat Hotel Rome. This is a defining leadership role for a dynamic, strategic, and refined hospitality professional who understands that true luxury lives in the details.
The Role
The Director of Food & Beverage is responsible for the strategic leadership, operational excellence, and financial performance of all F&B outlets, including signature dining, bar, in-room dining, and events.
Working closely with the General Manager, this role will shape a distinctive gastronomic identity that reflects Baccarat’s French heritage, Roman soul, and global sophistication — while delivering exceptional profitability and guest satisfaction.
Key Responsibilities
Define and execute the overall F&B strategy in alignment with the hotel’s luxury positioning
Lead, inspire, and develop a high-performing F&B leadership team
Oversee all restaurant, bar, banqueting, and in-room dining operations with uncompromising attention to detail
Drive revenue growth, cost control, and profitability across all outlets
Curate innovative culinary and beverage concepts in partnership with the Executive Chef
Ensure exceptional service standards that reflect the elegance and refinement of Baccarat
Oversee budgeting, forecasting, and financial planning for the department
Build strong relationships with suppliers and strategic partners
Maintain full compliance with health, safety, and quality standards
Profile
Proven experience as Director of Food & Beverage or senior F&B leader within a luxury or ultra-luxury hotel environment
Strong financial acumen with a demonstrated ability to drive performance and profitability
A refined sense of service, style, and guest engagement
Experience launching or repositioning high-profile dining concepts is highly desirable
Inspirational leadership style with the ability to cultivate talent and elevate teams
Strong understanding of international luxury clientele
Fluent in English; Italian strongly preferred
