About the Opportunity:
Assist the Head of Beverage in ensuring effective overall beverage operations. The role will involve championing the beverage programme at Lucas Collective by assisting with the creation of a world‑class beverage offering, including training, menu creation and staff development. This is a hands‑on role with at least half of the week spent in venues, including being in venue on shift for a minimum of two early evenings per week.
Key Responsibilities
Support the development and launch of cocktail menus across all venues
Deliver cocktail, spirits and beverage training programmes
Mentor bar managers and supervisors to drive performance and career development
Monitor beverage COGS, sales mix and profitability, taking corrective action where required
Oversee stocktakes, par levels and stock optimisation across venues
Conduct venue audits including cleanliness, compliance and batching standards
Support venue openings, activations and major events
Drive sustainability initiatives and zero‑waste programmes
Liaise with marketing to maximise visibility of launches and feature beverages
Support financial forecasting, reporting and performance analysis
The Ideal Candidate will have
Demonstrated senior beverage or bar leadership experience in premium restaurants/bars
Extensive beverage knowledge across cocktails, spirits, wine and beer
Proven experience managing COGS, GP targets and financial performance
Strong stock control and systems knowledge
Experience developing and delivering training programmes
Excellent stakeholder management and communication skills
High attention to detail and ability to manage multiple priorities
RSA certification (essential)
Qualification in Leadership & Management (desirable)
